- Some examples of techniques are spherification, crunchies, marinating by injection, airs and foams, etc.

- Some examples of knowledge are Maillard reaction mechanism, emulsions or enzymatic reaction as transglutaminase.

There is a big difference between the industry and the restaurant: from the restaurant kitchen to the table are only few meters, just a delay of second between preparation and degustation. The industrial products instead, have to tolerate a transport chain, storage and finally, preparation.
This is a big advantage for professional or amateur cooks in the innovation process!

Some people prefer to talk about scientific kitchen or science of kitchen rather than molecular gastronomy. Anyway, the appelative “Molecular gastronomy” is the most spectacular and thus it is being imposed as the most popular.
