Siphons and charges

Traditionally, siphons have been used to carbonate drinks, mainly flavored water, called soda.

Nowadays, they are used to prepare cold and warm mousses or foams.

Siphons use charges of pressurized gas (nitrous oxide) which is dissolved/emulsified in the liquid mix . When the nozzle is open, the pressure is released and the dissolved air makes a huge amount of tiny bubbles into the jellified/emulsified mix. The foam then goes out ready to be part of your plates.
Foam can also be frozen as an ice cream!
