Agar is a naturally occurring polysaccharide that is extracted from seaweeds.
Agar has strong gelling properties even at a low concentration.
Agar is not soluble in cold water. It should be dissolved in boiling water, becoming a gel when the temperature drops below 40 Celsius. Once the gel is set up it can be heated up to 65 Celsius before it melts.
The higher the concentration of agar, the stronger the gel.

Nutritionally, agar behaves like a dietetic fiber, which is in deficit in the occidental diets. It does not add calories to the diet.

NB: agar does not form gels in acidic solutions.
