Alginate
The term “alginate” refers to a group of naturally occurring polysaccharides that are extracted from brown seaweeds (Pheophycea).
Gourmetologia commercializes sodium alginate, which is soluble in cold water, conferring viscosity to the solution.
In the presence of calcium ions, sodium alginate becomes calcium alginate and the viscous solution jellifies (becomes a solid gel). This property is used in the spherification technique.
Nutritionally, alginate behaves like a dietetic fiber, which is in deficit in the occidental diets. It does not add calories to the diet.
Recommended concentration of use: 1,0-2,5% e.g. 10-25g/Kg
NB: alginate does not form gels in acidic solutions.
