K-Carragenan

The term “carragenan” refers to a group of naturally occurring polysaccharides that are extracted from red seaweeds (Rodophyta).
There are several types of carragenans, named by greek letters: μ (mu), κ (kappa), ν (nu), ϊ (iota), λ (lambda), θ (theta) y ζ (zeta).
Gourmetologia commercializes κ-carragenan, which is soluble in cold water, though it needs some minutes to get hydrated, conferring viscosity to the solution at a low concentration.
The viscous solution becomes a gel after heating over 80 Celsius and cooling down at room temperature.
The higher the concentration of κ-carragenan, the stronger the gel.
Nutritionally, κ-carragenan behaves like a dietetic fiber, which is in deficit in the occidental diets. It does not add calories to the diet.
