Methyl-cellulose
Methyl-cellulose is a derivative of cellulose in which some -H atoms have been replaced by –CH3. This small difference is enough to produce different textures in a solution.
Methyl-cellulose is soluble in cold water conferring viscosity to the solution at a low concentration.
The most impressive characteristic of methyl-cellulose is that it jellifies when heated and stays gel at high temperatures while it melts when the temperature drops.
Nutritionally, methyl-cellulose behaves like a dietetic fiber, which is in deficit in the occidental diets. It does not add calories to the diet.
