Locust bean gum
Locust bean gum is a naturally occurring polysaccharide produced from the carob tree (Ceratonia siliqua) seeds, mostly found in the Mediterranean and used since Egyptians times. The long pods that grow on the tree are used to make this gum.
Gourmetologia commercializes locust bean gum, which is soluble in hot and cold water producing a thicker solution and does not forms gels.
Instead of other thickeners like flours, locust bean gum does not confer any taste, colour or opacity to the solution.
When frozen, locust bean gum delay the sugar cristallization, giving to ice cream a pleasant texture in mouth.
Nutritionally, gellan low behaves like a dietetic fiber, which is in deficit in the occidental diets. It does not add calories to the diet.
