Lecithin
Strictly lecithin is the common name of phosphatidylcholine, a type of phospholipid. By extension, all the phospholipids and mixtures of them are called lecithin.
Commercial lecithin is therefore a mixture of phospholipids where the fatty acids bind to glycerol and the molecule binds to phosphate (choline, inositol, serine, etc.)vary.
Emulsifiers are classified according to their BLH index indicating its polarity. Thus, a high index indicates a high polarity and high emulsifier capacity (detergent) and a low rate indicates a low polarity and low emulsifying capacity (defoamer)
Gourmetologia markets hydrolyzed soja lecithin (no GMO), where one of the two fatty acids of original lecithin has been partially removed enzymatically to increase its polarity and thus its BLH index, producing a more potent emulsifier than unchanged lecithin.
Our lecithin is adsorbed in maltodextrine for easy handling and dosing.
