Potasium citrate

Potasium citrate is a buffer sustance. It is used to correct the Ph of acidic liquid, (lemon juice, red wine, etc), allowing the jellification of agar or alginate that do not jellify in acidic solution.

It substitutes natrium citrate in low sodium diets.
