Guar gum

Guar zoon.jpg

Guar is a naturally occurring polysaccharide that is produced by guar plant (Cyamopsis tetragonoloba).

Guar is dissolved rapidly at any temperature increasing the viscosity even at very low concentration but it does not produce gels at all.

Instead of other thickeners like flours, guar does not confer any taste, colour or opacity to the solution and it has a pleasant texture in mouth.

Nutritionally, guar gum behaves like a dietetic fibre, which is in deficit in the occidental diets. It does not add calories to the diet.
