Xanthane is a naturally occurring polysaccharide that is produced by bacteria of genus Xanthomonas.

Xanthane is dissolved rapidly at any temperature increasing the viscosity even at very low concentration but it does not produce gels at all.

Instead of other thickeners like flours, xanthane does not confer any taste, colour or opacity to the solution and it has a pleasant texture in mouth.

Nutritionally, xanthane gum behaves like a dietetic fibre, which is in deficit in the occidental diets. And it does not add calories to the diet.
