pH paper

Some gels (alginate, agar) need a pH over 4-5 to jellify while a lot of raw ingredients has a pH below 4.

This can be fixed using citrate, but how much?

Some recipes include the necesary ammount of citratebut the easiest way is to check it by yourself while you dissolve it.

A couple of centimeter is enough to test the pH, comparing the color with the graduate scale.
