Airs and foams
Air and other pure gases can also be emulsified with water. The difference between airs and foams is the amount of emulsified air and thus the size of the bubbles.
Both can be eaten warm, cold or even frozen.
Foams (read more) are also known as mousses and are made with siphon resulting bubble size below millimetres and a creamy texture.
Airs (read more) have recently appeared and they are not much known yet. They are made with lecithin and hand shaker, resulting bigger bubbles size, about centimetres and a very light texture.
