Spherification is a quite old technique. It was patented in 1946 by Peschardt, W. J. M.,” Manufacture of artificial edible cherries”. US Pat. 2,403,547. Nowadays is coming back with renewed strength.
It can be defined as the formation of liquid spheres surrounded by a solid membrane-like.
This can be possible thanks to a alginate property: jellification of calcium alginate. Alginate flavored solution is dropped in a bath with calcium ions. The external part of every drop jellifies instantly at the contact with calcium ions, keeping liquid the interior of the drop.
The spheres must be rapidly poured out from remaining calcium in order to keep the interior liquid.

It is possible to prepare lemon flavored spheres, meat flavored spheres, alcoholic drinks spheres, etc, …..

The limit is your imagination!

The same technique can be used to prepare different size spheres, small like caviar or bigger like raviolis, just using a syringe or a spoon respectively.
The bigger the sphere the longer time takes to jellify the whole sphere, making it easier with bigger spheres.

Recommended alginate concentration: 15-20 g/l
recommended Calciun chloride concentration: 20-25 g/l

Another possibility is to make flavored spaghettis. In this case the alginate solution is not dropped neither spooned but injected into the calcium bath. The result is long spaghetti, as long as the syringe volume allows it. A longer time in the bath is convenient to allow an entire jellification. These spaghettis resist heating thus can be cooked as normal.

These spaghettis do not contain flours thus no gluten either calories (only those from the rest of ingredients).
