Spherification without alginate

Spherification is based on the property of alginate to become a solid in presence of calcium ions.
Tipping the alginatesolution over a calcium bath you can get small caviar-like balls.

- Liquid nitrogen: It is so cool than can even froze spirits. With this technique you do not need to add a gel to the liquid to spherify. Just tip it over a colander in the liquid nitrogen. Once you have freezed the liquid you can cover with a gel (with another taste or not) wich jellify on top of every small ball. When temperature raise again to room temperature the frozen liquid thaws and become liquid while the gel outside keep solid.
With this technique, it is posible to make bigger forms than small balls just using liquid nitrogen resistant molds.
